Released in 2000 by Yakima Chief Ranches, Simcoe (YCR 14 cv.) is widely regarded as one of the most versatile and influential hops in the craft beer revolution. It is often called a “chameleon” because its aromatic profile can shift dramatically depending on when it is added and what yeast it is paired with.
The Profile: Pine Meets Passionfruit
Simcoe is famous for its unique “dual” character. It provides a bridge between the old-school resinous hops and the modern tropical varieties.
- Primary Aromas: Distinctive pine resin and forest floor, balanced by vibrant passionfruit and grapefruit.
- Secondary Notes: Subtle hints of earth, wood, and sometimes a light “onion-garlic” pungency if used in extreme quantities (a trait shared with its child, Mosaic).
- Alpha Acids: High (12-14%), making it a fantastic bittering hop in addition to its aromatic qualities.
Brewing with Simcoe
Simcoe is a “workhorse” hop that excels in almost every stage of the brewing process.
- Bittering: Its clean bitterness profile makes it a favorite for the start of the boil in West Coast IPAs.
- Late Additions: When added in the whirlpool, it leans more into its tropical passionfruit side.
- Dry Hopping: Provides a complex, multi-layered aroma of pine needles and ripe fruit that defines many “Double IPAs.”
- The “Northwest” Profile: Simcoe is a key component of the classic Pacific Northwest hop profile, often paired with Amarillo, Centennial, and Citra.
Why Brewers Love It
Simcoe is remarkably stable and consistent. It “fills the gaps” in a hop blend, providing a resinous backbone that keeps tropical-heavy beers from feeling too one-dimensional or “juice-like.” It reminds the drinker that they are, in fact, drinking a beer.
