Mosaic Hops: A Tapestry of Aroma
Released in 2012 by the Hop Breeding Company, Mosaic (HBC 369 cv.) is the daughter of Simcoe and a Nugget male. It earned its name because of the “mosaic” of complex aromas and flavors it brings to a beer. It is widely considered one of the most versatile and beloved hops in modern brewing.
The Profile: Complexity in Every Cone
Mosaic is unique because it combines high alpha acids with an incredibly broad spectrum of aromas. It is often described as more “earthy” and “complex” than Citra.
- Primary Aromas: Intense blueberry, mango, and stone fruit (peach, apricot).
- Secondary Notes: Notes of rose, pine, and a distinct herbal or “dank” quality that adds depth.
- Alpha Acids: High (11.5-13.5%), making it excellent for both bittering and aroma.
Brewing with Mosaic
Mosaic is the ultimate “stand-alone” hop. While many hops need a partner to feel complete, Mosaic has enough complexity to carry a “Single Hop IPA” on its own.
- Late Additions: While it can be used for bittering, most brewers use it in the whirlpool or for dry hopping to maximize its fruit character.
- The “Citra-Mosaic” Blend: This is perhaps the most famous hop duo in brewing history. The bright citrus of Citra combined with the deep berry/earthy notes of Mosaic creates the “perfect” IPA profile.
- Styles: Dominates Hazy IPAs, Double IPAs, and Pale Ales. It is also increasingly used in “Cold IPAs” and modern pilsners for a contemporary twist.

Mosaic offers a “three-dimensional” hop experience. It provides the juice that modern drinkers crave, but also the resinous and herbal backbone that reminds you it’s a beer. It is remarkably consistent and performs well in a variety of fermentation environments.
